Instructions

Brown the butter.
Melt the butter in a light-colored saucepan over medium heat. Swirl occasionally as it foams, then browns — about 5 to 7 minutes, until it smells nutty and you see browned bits on the bottom. Pour into a bowl right away to stop the cooking, and let cool for about 10 minutes before using.
- Preheat & prep pan. Preheat oven to 350°F. Grease a 9x5-inch loaf pan with butter or baking spray.

Whisk dry ingredients.
In a medium bowl, whisk together the flour, baking soda, and salt.

Combine wet ingredients.
To the mashed bananas, add the brown sugar. Beat in the eggs one at a time. Mix in the browned butter, Greek yogurt, and vanilla.
- Add dry ingredients. Add the dry ingredients to the wet mixture and mix with a spoon — not the stand mixer — until just combined (you shouldn't see any more flour). Overmixing will make the loaf dense.

Fold in chips.
Fold in the chocolate chips.
- Fill the pan. Pour the batter into the prepared loaf pan.
- Bake. Bake for 50 to 60 minutes, or until a wooden pick inserted into the center comes out clean.
- Cool. Let cool in the pan for 20 minutes, then remove and finish cooling on a wire rack.
Note Let the brown butter cool before mixing it in — hot butter can scramble the eggs. Use full-fat Greek yogurt, too; low-fat versions add moisture but not enough fat, which can make the crumb rubbery.
